Crispy Quinoa Burger with Flax Seed

My first attempt at making my own veggie burgers!

Ingredients:

  • Cooked quinoa
  • Black beans
  • Shredded cheese
  • 1 Tablespoon cream cheese
  • 2 eggs
  • Chopped white onion
  • Shredded carrots
  • 2 cloves of garlic, minced
  • Hot sauce
  • 2 tablespoons of flour
  • 1 tablespoon of flax seed
  • Salt
  • Chili powder
  • Black pepper

Instructions:

  1. Rinse and drain dry quinoa, add to boiling water. Then reduce to simmer, cover and simmer for 15 min. Let cool
  2. Chop vegetables and set aside
  3. Smash black beans with the back of a fork into a paste
  4. In a large bowl add chopped vegetables, beans,eggs, cream cheese, shredded cheese, flour, flax seed, hot sauces and spices. Stir all of the ingredients.
  5. Next, add the cooled quinoa to mixture
  6. Heat 2 tablespoons of olive oil in a large pan. Using your hand, form palm size portions of mixture. If you notice that the mixture is not sticking together and forming patties, add more flour.IMG_5902
  7. Place patties into hot pan. Cook for 3-4 min on each side, or until golden brownIMG_5904
